Sweet Potato Cakes
1 cup of
mashed sweet potatoes
2 cups of sifted flour
1 1/2 teaspoons of sugar
1 1/2 teaspoons of salt
2 1/2 teaspoons of baking powder
1/2 cup of vegetable oil
1/2 cup of milk
Sift the flour, baking soda, sugar and the
salt into a bowl.
Mix the oil and milk with the mashed sweet
potatoes until well blended.
Add the sweet potato mixture to the flour
mixture and mix lightly with fork until
mixture holds together.
Turn the dough out onto a floured board and
knead gently until smooth.
Roll dough out to about 1/4" thick and cut
into rounds with floured biscuit cutter.
Place the sweet potato rounds on a baking
sheet and bake at 425 degrees for 10-20
minutes.
