Baked Mashed Potatoes
3
pounds of potatoes (about 6 large)
1/4 cup of finely chopped onion
1/4 cup of butter or margarine
1 – 12 ounce carton of small curd
cottage cheese
1/4 cup of snipped parsley
1 teaspoon of salt
Margarine or butter, melted
Peel, cook, and mash the potatoes.
In a saucepan cook the onion in 1/4 cup
of butter or margarine until tender but
not brown.
Stir the onion, salt, parsley, and
cottage cheese into the mashed potatoes.
Spoon the potato mixture into a well
greased 2-quart casserole dish.
Drizzle melted butter over the top.
Bake at 350 degrees for about 30 minutes
or until the mixture is heated through
and lightly browned on top.
