Johnny Cakes
1/2
cup of flour
1 cup of cornmeal
1 teaspoon of sugar
1 teaspoon of salt
1 lightly beaten egg
1 cup of hot water or milk
1 tablespoon of shortening
Mix all of the dry ingredients together
and then stir in the egg, water or milk,
and the shortening.
Drop or pour into a hot, greased cast
iron skillet to form small cakes, and
fry until golden brown on both sides.
Can be eaten with butter as bread or
with molasses or syrup as pancakes.
